Mike Patrick is one of Australia’s most renowned “pit masters”. He first honed his skills with fire as the head chef at Melbourne wood-fired pizza institution Ladro and the city’s Argentinian steak restaurant, San Telmo. With old friend Kent Bell he began Fancy Hanks as a mobile barbecue service. It’s now a permanent restaurant on Melbourne’s Bourke Street.  His favourite foodie city to visit is Singapore.

LOCAL FOOD DISCOVERY

Liao Fan Hong Kong Soy Sauce Chicken Rice and Noodle is in Chinatown and has a Michelin star. I can’t go to Singapore without multiple visits to this place. Fantastic $2 Chicken Rice – you can’t go wrong. The queue can be long as it is popular with tourists and locals, so get there early.  (Chinatown Complex Market & Food Centre, 335 Smith Street)

BEST-KEPT FOOD SECRET

Sin Heng Claypot Bak Kut The has the best pork rib broth I’ve tried in Singapore. It’s so fragrant and served in claypots. This is a 24-hour local spot, so it’s a great place to go after drinks if you’re craving a late night snack. (439 Joo Chiat Road.)

A DAY OFF

I got to spend a couple of hours at Timbre+ Gastropark, Singapore’s first container and food truck park on my last visit to Singapore. It has 14 restaurants and 21 hawker stalls, plus live music at night. It’s an awesome place to sample a range of Singaporean cuisine, especially for a big group. See timbreplus.sg

 FAVOURITE INDULGENCE

The chili crab at Sin Hoi Sai is a real treat. Grabbing a heap of friends and sitting around a big communal table cracking claws with bits of shell flying and of course, lots of laughs. Make sure you order lots of fried buns to soak up the sauce. It is such a lively part of town especially late at night, there is a lot of young people eating and drinking until late. Everyone really gets into the atmosphere, because it’s so humid and hot during the day you can really let loose after dark. (Block 55, Tiong Bahru Road #01-59)

A BIG NIGHT OUT

Bar hop in the Telok Ayer area in the Outram district of Singapore, it has some of the best food and drink options. This area has got the best atmosphere late at night, the temperature cools down a little and all the people come out for the food and drinks. 

 BEST TIME TO VISIT

All year round, however July is especially exciting with the annual Singapore Food Festival. There are amazing chefs from high-end restaurants cooking in the hawker markets and hawker stand cooks in the high-end restaurants. My last visit was very fun.
